Oops, you're using the oldest version of the AT firmware that exists! You need to update your firmware, there have been hundreds of updates since this version. Not that, I was refering to firmware version number.
You can also follow a nomenclature that helps determine version on server and if it is different from current firmware running on your ESP, such as user_x.bin

Ohh, I suggested port 80 because that is the default port in all browsers.

Correct. The singleton mode optimizes the library during COMPILE phase, and not during run time.
And you are right, if you make any modifications to config options of a header file related to a .a type library file, you need to reconfigure the sources in most cases.

Yes, without the version information, there is no way of knowing whether to update or not.
However, it all depends on your update server implementation.

By default, the server IP of ESP8266 in AP mode is 192.168.4.1
When you start your server in the ESP, make sure the port is 80.
Seems like you are doing everything right. You can ping the ESP server IP to make sure your ESP setup is good.

Staion + AP mode is not required in your project.

You may use the API wifi_softap_set_dhcps_lease_time() and wifi_softap_gset_dhcps_lease_time() to set and get the DHCP server lease time respectively. The default time is 120 min.
