We would strongly recommend using SSL libraries provided with the nonOS SDK. The program, in theory, will not be very different from Arduino code. However, you can have full control over how you are implementing SSL/TLS. :)

I think using mDNS APIs from the SDKs will be the best option for getting this done.
The other option would be to have this ESP server use a static IP and then add a custom domain name record in your clients such that a specific domain name will always point to the IP of the ESP8266 server.

Please use consecutive calls to the fast read API to get ADC samples. The buffer for the API is probably internally limited (I am not very familiar with exact internal implementation of the API). Call system_soft_wdt_reset() as well before initiating fast_read API.

It will depend on the source of audio or video. I have been able to stream 720p MP4 video (downloaded from YouTube) with audio form a memory card before using ESP8266.
