To trace back from assembly file, you will need to have basic knowledge of assembly knowledge for any modern core. For example, an ARM7, ARM9 or something equivalent. The ADC is closely integrated with RF circuitry, you may not be able to use it for sampling when RF is running. It is recommended to stop any RF operation when using ADC. Otherwise maybe just get a single ADC reading, do not use fast_read.

Complying will full temperature range will require proper matching and calibration. The crystal would be the first thing of importance here. You should not be getting this delayed data.
Are you using hardware flow control? Is that causing data to stay in buffer accidentally, maybe?

The RTC peripheral memory and clock do work even when there is no active CPU. That is how events like deep sleep wake-up, etc are timed.
