i would like to use the ESP8266 to measure some data via a sensor every 60 seconds and send that data via a http get request to my webserver. Then i want the esp8266 to sleep again for 60s before it does the same thing again. How could i accomplish this?
This is ok. One thing to remind you that if you force ESP8266 to light sleep or deep sleep, then wifi connection will be lost. So in your application, before sending http get request to your webserver, you need to assure your ESP8266 connect router successfully. So you should cut dowm your ESP8266 sleep time to give enough buffer time to connect to router.
