I have developed a web api and want my esp device to consume this.
As this web api is under development we have a self signed certificate installed on our server.
What is the recommended way to connect it securely using the self signed certificate ?

I'd point you to the SSL user manual for ESP8266:

Self signed certificates are fine with ESP8266. Your connection will still be encrypted, even though identity verification may not be possible.
